Juyi Ramen: Quiet craft on Prins Hendrikstraat
Juyi Ramen opened its doors just eight weeks ago, and it already feels like a welcome addition to Prins Hendrikstraat.
The restaurant is small and focused, with a menu that offers three ramen options. That focus is also reflected in the way the food is prepared. Every day, the ramen broth is made from scratch and simmered for eight hours, ready in time for dinner service. The noodles are freshly made and cooked to the second, creating that ideal noodle-bite.
The Bowls
Shio
A beautifully clean and elegant bowl made with chicken and pork broth, finished with dashi. The clarity of the broth doesn’t take away from its depth; instead, it allows the flavours to come through gently. The chashu is flame-torched just before serving, adding a subtle smoky note to the meat.

Shoyu
This was my favourite of the three. Rich, savoury, and deeply comforting, with a depth of flavour makes you want to be wrapped in it like a warm blanket.

Tori Paitan
A creamy chicken broth topped with chicken chashu. Full-bodied and soothing, this is a bowl that feels comforting from the first to the last sip. Almost healing.

The Space
Juyi has just twelve seats at the kitchen counter, which creates an intimate and calm atmosphere. There are no reservations; you order and pay upon entering the restaurant, and the focus quickly shifts to the bowl in front of you.
I had a brief chat with the chef during my visit and learned a couple of nice details. The name Juyi is a combination of his Dutch name, Julius, and his Chinese name, Youyi. Before opening the restaurant, he worked as a software developer — and he even used those skills to develop the payment machine that customers use to prepay their ramen when they arrive.
Juyi Ramen is a place I’m looking forward to returning to, not only to try the other ramen bowls again, but also to see how this young restaurant continues to develop.
